I saw a recipe for pistachio, lemon, vanilla shortbread in an ancient Bon Appetit magazine Scotland issue. Ooo, I thought, what if I found all the ingredients and made a nice tea for my mom when they visit? Usually I remember those thoughts after my parents leave and then I’m sad. Not this time! I remembered it in time to find the ingredients and make a nice tea for my mom! Daddy joined us on the patio for this afternoon treat on the last day of their visit. Isaac napped.
Happy Mothers Day Shortbread
1.5 cups flour
half cup sugar
half cup semolina flour (I found this near the gluten-free stuff)
two sticks of butter
1.5 teaspoons grated lemon peel
1 teaspoon vanilla extract
1 cup shelled pistachios, coarsely chopped
Mix ingredients together in the order listed, then press into a prepared 9×13 pan and bake 35 minutes at 350 degrees F. Cool completely, then cut into squares and serve with tea!
We had TWG English breakfast tea (in the afternoon!), pistachios, and enormous (very tasty) strawberries. The breeze was pleasant, and the wind bells tinkled enthusiastically. Happy Mothers Day, Mum!!
